Beetroots are a great source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C. They have been associated with numerous health benefits, including improved blood flow, lower blood pressure. Storage tips: Store beetroots in the refrigerator placed in a perforated plastic bag in the vegetable crisper drawer. If there is no room in the refrigerator, they can also be packed in a container or plastic storage box or cooler–in moist sand, peat moss, or sawdust.
